The cake platter wouldn't hold them all.. we made 4 batches because the Zane wanted to take some home to his brothers and sisters.. so we made a bunch!
We also made some
cake batter rice crispy treats.. All you do is add a 1/2 cup of yellow cake mix after the marshmallows are melted and then top it with.
For dinner, I had no idea what I was going to fix.. this was a fast meal.. and it was one of the best meals I have had in a while..
Balasmic Roasted Chicken Breast topped with provolone cheese - roasted cherry tomoatoes ( from the garden ) on the side.. Served with baked potatoes ( fast bake ) and frozen corn.
When I started out I had no idea what I was going to fix.. I knew I had some chicken breast in the frig.. but that was it. I thought about it.. looked around the kitchen and figured I would make my
30 minute balasmic chicken breast topped with cheese..along with fresh balasmic glazed cherry tomatoes from the garden.
All I did was take 4 large chicken breast. I cross cut them before they went on the indoor grill so the glaze would seep down into it. Just don't cut all the way through.. cut slits going one way and then cut slits going the other way.
Find any balsamic glaze in your market.. it doesn't have to be a particular kind!
I halved the cherry tomatoes, seared in a non stick skillet, add a couple table spoons of the baslmic glaze and finished off with some fresh basil. You just want some color on the tomatoes..
To make the fast baked poatoes, I cooked them most of the way in the microwave and then coated in olive oil and rolled in kosher salt and tossed in the oven for 10 minutes.. They turn out great that way!
When the potaotes went in the oven, I warmed up from frozen corn with some butter, sugar, and salt in the microwave.
And in 30 minutes this wonderful dinner was done.
Tell me this doesn't look amazing..
It was really really good. We all loved it.. In fact, Zane had left overs for lunch today!
Super easy, super fast, and the chicken was juicy and delicious. You could make it on the grill too. If you have trouble either not cooking the chicken long enough or too much making it dry, invest in a Meat Thermometer.. The chicken needs to have a internal temp of 165.
