Winter Minestrone Soup Step by Step VIDEO


I love soup. I love one pot meals..and this Minestrone soup is delicious and pretty easy to make.. and it feeds an army and to top it off.. it freezes really well too.

 First thing.. gather up all the ingredients. 

Ingredients

2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, chopped
2 celery stalks, chopped
3 ounces thinly sliced pancetta, coarsely chopped ( or bacon )
2 garlic cloves, minced
1 pound Swiss chard, stems trimmed, leaves coarsely chopped..( spinich works well too )
1 russet potato, peeled, cubed
1 (14 1/2-ounce) can diced tomatoes
1 fresh rosemary sprig
1 (15-ounce) can cannellini beans, drained, rinsed
2 (14-ounce) cans beef broth
1/2 lb mediumn size shell pasta ( any kind of small pasta would work just fine )
1 ounce piece Parmesan cheese rind or a 1/2 cup grated Parmesan
Salt and pepper

There is a lot of chopping for this recipe. I prefer to use a knife but you could also use a food processor or one of those chopper machines.

Also the recipe above is just for one pot.. In the pictures below.. I am making a double batch.



I did a medium dice on the the veggies and bacon. So peel the carrots and potato.. dice them up along with the celery and onions.. and I couldn't find pancetta at the small store in town.. so I just used bacon and it just as good! Remember to not cut up meat on your wood cutting boards. 

Also being you are doing a lot of chopping.. make sure you have a good knife. Otherwise this will feel like a lot of work. 


For the garlic I just used my handy 


 garlic press but dice that up too if you don't have one. 

Warm up olive oil and add cut veggies and bacon.. 


 cook for about 10-15 minutes - stirring often - until the onions become soft and translucent. 


 Then add the spinach or Swiss chard


Don't worry about the pot being really full.. it cooks down really fast! 


Then add the tomatoes.. 


Cook on med heat for another 10 minutes to break down the potatoes.. 


Add rosemary


Then add the beef broth.. I like too add a little extra than what the recipe calls for because the broth is so good. Bring it to a boil and add the pasta. Cook until tender.. Add the Parmesan... salt & pepper  and enjoy!


This soup is so good. We ate it for a couple of days.. and I froze a bunch of it. Just put it in a freezer ziplock and lay it flat in the freezer. One it has froze.. you can simply stand it up in the freezer. It won't take up a lot of room and all you have to do is pop it in the microwave and you will have a home made soup in minutes.. Perfect for any winter day when you don't really feel like cooking!

I love serving it with a warm crusty piece of bread. This time.. I served up a sour dough loaf. We all really loved it.
